1 1/2 | cups | tri-colored quinoa, rinsed | |

1 | European cucumber, peeled, ends trimmed, and cut into 1/4 inch cubes | ||

1 | large | tomato, cored, seeded, and diced | |

|||
1 | bunch | Italian parsley leaves, chopped | |
|
|||
1/4 | cup | extra-virgin olive oil | |
|
|||
1/4 | cup | mayonnaise | |
|
|||
1 1/2 | teaspoons | salt | |
|
|||
3/4 | teaspoons | freshly ground black pepper | |
|
Bring the water to a boil in a large saucepan. Then add the quinoa, stir once, and return to a boil. Cook uncovered over medium heat for 12 minutes. Strain and rinse with cold water in a sieve. Allow quinoa to dry then transfer to a large mixing bowl. Add the cucumbers, onion, tomato, parsley, olive oil, mayonnaise, salt and pepper. Combine well.
